Versatile sourdough bread sticks can be customized with various spice toppings for any meal.
Ingredients:
  • 3 tablespoons white sugar, divided
  • 1 cup warm water, or more as needed
  • 1 teaspoon active dry yeast
  • 4 cups all-purpose flour
  • 1 cup sourdough starter
  • 1 egg, separated
  • cooking spray
Instructions:
  • Combine 2 tablespoons of sugar with water, stirring until fully dissolved. Add yeast and allow it to sit until foamy, for 5 to 10 minutes.
  • In a large mixing bowl, combine the remaining sugar, flour, and salt. In a separate bowl, mix the sourdough starter and egg yolk. Lightly whisk the egg white and refrigerate it for later use.
  • Combine the yeast and sourdough mixtures with the flour mixture, using a wooden spoon, until dough forms and all dry ingredients are mixed. Transfer to a work surface and knead until a smooth ball of dough is achieved.
  • Coat the bowl with cooking spray, then place the dough inside and cover with a cloth. Allow it to rise for 1 hour.
  • After punching down the dough, divide it into 12 portions and roll each into small balls before shaping them into 3- to 4-inch-long sticks. Spread the bread sticks between 2 greased or nonstick pans, cover with cloths, and let rest for 45 minutes.
  • Preheat the oven to 350°F (175°C).
  • Bake in the preheated oven until light brown, for 15 to 20 minutes. Remove one pan at a time, brush the tops with egg white, and continue baking until medium brown, for an additional 5 to 10 minutes.
