Indulge in heavenly French toast, infused with coffee, vanilla, and maple syrup, made perfect with sourdough bread. Perfect for breakfast or dessert lovers!
Ingredients:
  • 125ml (1/2 cup) milk
  • 54.00 gm maple syrup
  • 4 eggs
  • 125ml (1/2 cup) espresso (see note)
  • 2 tsp vanilla bean paste
  • 2.50 gm cocoa powder, plus extra to serve
  • 1.25 gm ground cinnamon
  • 500g mascarpone
  • 12 thick large slices sourdough bread
  • 50g butter
  • Maple syrup, extra, to serve
  • 40g (1/4 cup) pistachio kernels, lightly toasted, chopped
Instructions:
  • Blend the milk, maple syrup, eggs, espresso, vanilla, cocoa powder, cinnamon, and half of the mascarpone in a food processor until smooth.
  • Place the bread in a large ceramic or glass dish, then generously pour over the milk mixture. Let it sit for 20 minutes, turning halfway through, allowing the flavors to meld beautifully.
  • Melt one-third of the butter in a large non-stick frying pan over medium heat. Cook the bread in 3 batches, turning, for 2-3 minutes each side until golden. Repeat with the rest of the butter and bread, cleaning the pan with paper towel between batches.
  • On serving plates, layer one-third of the bread, top with a dollop of the remaining mascarpone. Repeat layers of bread and mascarpone, ending with a layer of bread. Drizzle with more maple syrup, sprinkle with pistachios, and dust with additional cocoa.
