A festive twist on the classic muesli bar with Turkish delight, rice bubbles, white chocolate, and dried apricots for a delightful Christmas crunch.
Ingredients:
  • 75g (1/3 cup) Turkish dried apricots
  • 75g (1/2 cup) pistachio kernels, plus 2 tbs finely chopped, extra
  • 200g good-quality red or pink Turkish delight
  • 70g (2 cups) rice bubbles
  • 400g white chocolate, melted
Instructions:
  • Prepare a 20cm pan by greasing the base and sides, then lining it with non-stick baking paper.
  • Finely chop the apricots using a sharp knife, then coarsely chop the Turkish delight and finely chop the pistachio kernels.
  • Combine the rice bubbles, apricot, pistachio, and Turkish delight in a large bowl for a delightful mix.
  • Drizzle the white chocolate onto the rice bubble mixture, gently fold until thoroughly mixed and fully coated.
  • Evenly spread the rice bubble mixture over the base of the prepared pan and press down firmly to create a smooth surface.
  • Top with the additional pistachios and let it chill for 2 hours until firm. Cut into 16 slices before serving.
