Festive white chocolate dessert with citrus zest and glace cherries - perfect for unexpected guests!
Ingredients:
  • 400g pkt plain digestive biscuits, broken into large pieces
  • 75g (1/2 cup) pistachio kernels, coarsely chopped
  • 65g (1 cup) shredded coconut, lightly toasted
  • 200g butter, melted, plus 125g extra, chopped, at room temperature
  • 250g cream cheese, chopped, at room temperature
  • 150g (1 cup) icing sugar mixture
  • 2 tsp finely grated orange or lemon rind
  • 180g white chocolate, melted, cooled
  • 300ml thickened cream, whipped
  • 150g pkt red glace cherries, coarsely chopped
Instructions:
  • Prepare a 20 x 26cm roasting pan by greasing it generously and lining the base and sides with baking paper, letting the paper hang over the edges.
  • Combine biscuits, pistachio kernels, and coconut in a food processor and pulse until mixture resembles coarse crumbs. Pour in melted butter and sugar and pulse until well combined. Press two-thirds of the mixture into the pan using a flat-bottomed glass. Chill in the fridge for 30 minutes. Keep the remaining mixture at room temperature for later use.
  • In a large bowl, use electric beaters to mix together cream cheese, remaining 125g chopped butter, icing sugar, and rind until light and creamy. Slowly incorporate the white chocolate, continuing to beat until thoroughly mixed.
  • Combine the whipped cream and glace cherries with the cream cheese mixture until fully mixed. Spread over the biscuit base, smoothing the surface. Sprinkle the remaining biscuit mixture on top. Chill in the fridge for 4 hours or overnight before serving.
