Festive chocolate truffles, perfect for holiday gifting and entertaining. Chill for 3 hours before enjoying.
Ingredients:
  • 180g white chocolate, chopped
  • 80ml (1/3 cup) Thickened Cream
  • 1 tsp vanilla bean paste (optional)
  • 40g (1/4 cup) dried cranberries, chopped
  • 40g (1/4 cup) pistachios, chopped
  • 35g (1/3 cup) desiccated coconut
Instructions:
  • In a heatproof bowl, combine the chocolate and cream and place it over a saucepan of simmering water, ensuring the bowl doesn’t touch the water. Stir with a metal spoon until melted and smooth. Add vanilla if desired and let it cool slightly.
  • Incorporate cranberries and pistachios. Chill for roughly 3 hours, stirring occasionally, until mixture can be shaped into balls (it will remain slightly sticky).
  • Spread shredded coconut in a shallow dish. Shape level tablespoons of the mixture into balls, then coat each ball in coconut. Store the balls in a single layer in an airtight container in the fridge until serving.
