Coconut snowballs

Delightful white chocolate truffles - ideal holiday gifts!
Ingredients:
  • 250g packet plain sweet biscuits (see note)
  • 42.50 gm desiccated coconut
  • 1/2 x 100g packet multi glace cherries, finely chopped
  • 4.40 gm vanilla extract
  • 395g can sweetened condensed milk
  • 1 1/2 x 375g packets white chocolate melts
  • 3.40 gm desiccated coconut, extra
Instructions:
  • Prepare a large baking tray with baking paper. Put biscuits in a food processor and blend until it reaches a fine breadcrumb consistency. Transfer the mixture to a large bowl and combine with coconut, cherries, vanilla, and milk. Mix until well blended.
  • Roll 1 level tablespoon of mixture into a ball using damp hands and place it on the prepared tray. Repeat with the remaining mixture. Freeze for 1 hour or until firm.
  • Combine chocolate in a heatproof microwave-safe bowl. Microwave on medium power for 3 to 4 minutes, stirring halfway through with a metal spoon, until velvety smooth.
  • Take a snowball and dip it in melted chocolate using a fork, making sure to shake off any excess. Place it back on the tray and sprinkle with a bit of extra coconut. Repeat this process with the rest of the snowballs, melted chocolate, and coconut. Refrigerate until the chocolate is set, then serve.
