Coconut Snowballs

Transform ice cream and coconut into a divine frozen treat.
Ingredients:
  • 2 cups flaked coconut
  • 1 half-gallon ice cream (any flavor)
Instructions:
  • Line each of the 12 regular-size muffin cups with paper or foil baking cups.
  • Spread shredded coconut on a shallow pan or plate. Use an ice cream scoop to form 12 balls of ice cream. Roll each ball in the coconut using two forks. Transfer the coated ice cream balls into baking cups.
  • Uncover and place in freezer for a minimum of 3 hours until solid. Wrap, label, and store back in the freezer for up to 2 weeks.
