Wholesome carrot energy bites, ideal for snacking.
Ingredients:
  • 35g (1/2 cup) coarsely grated carrot
  • 45g (1/4 cup) sultanas
  • 30.00 gm light cream cheese
  • 35g (1/3 cup) desiccated coconut
Instructions:
  • In a small bowl, mix together carrot, sultanas, and cream cheese. Chill in the fridge until firm. Spread coconut on a plate. Shape teaspoonfuls of the mixture into balls and coat them with coconut.
