Spice up your slow-cooked baked chicken with a zesty peri peri marinade.
Ingredients:
  • 40.00 ml plain flour
  • 10.00 gm ground cumin
  • 10.00 gm ground paprika
  • 2 tsp dried oregano
  • 1.2kg chicken drumstick
  • 1.2kg chicken thigh
  • 80ml olive oil
  • 2 small red onions, cut into wedges
  • 2 x 400g cans cherry tomatoes
  • 262g btl Nando’s Peri-Peri Marinade Medium
  • 12 kipfler or baby potatoes, scrubbed, halved lengthways
  • 6.00 gm sesame seeds
  • 300g green cabbage, shredded
  • 4 qukes (baby cucumbers), quartered lengthways, thinly sliced
  • 2 carrots, peeled, shredded
  • 75g aioli
  • 21.00 gm lemon juice
Instructions:
  • Preheat your oven to 150°C. In a bowl, mix together flour, cumin, paprika, and oregano, then season the mixture. Add the chicken and toss until coated evenly.
  • Heat 2 tablespoons of oil in a large flameproof casserole pan. Sear chicken in batches for 2 minutes each side until golden brown. Transfer to a plate.
  • Sauté the onion in the pan for 2 minutes until slightly softened. Add tomatoes and marinade, then return chicken to the pan. Bring to a boil, cover, and bake for 2 1/2 hours until the chicken is very tender.
  • Place the potato in a shallow microwave-safe dish with 1/4 cup (60ml) water, cover, and microwave on high for 5 minutes. Drain the potato, then toss it with the remaining oil on a baking tray, season it, and bake it with the chicken for 40 minutes or until golden. Finally, sprinkle with sesame seeds for extra flavor.
  • In a serving bowl, toss together cabbage, cucumber, carrot, aioli, and lemon juice. Serve the chicken with the potatoes and cabbage mixture.
