Create flavorful peri-peri chicken tray bake with just 5 ingredients.
Ingredients:
  • 1.3kg RSPCA Approved Whole Chicken
  • 125ml peri peri sauce
  • 500g kipfler potatoes, thickly sliced diagonally
  • 2 zucchini, thickly sliced diagonally
  • 250.00 ml coriander leaves
Instructions:
  • Preheat oven to 200C. Dry chicken with paper towel. Place chicken breast-side down on work surface. Use kitchen scissors to remove backbone. Discard.
  • Position the chicken breast-side up and gently press down on the breast with the palm of your hand to flatten it. Tuck the wings under the chicken, then transfer it to a large roasting pan. Brush the chicken evenly with half of the peri-peri sauce. Arrange the potatoes around the chicken and brush them with the remaining sauce. Season generously.
  • Roast the dish in the oven for 45 minutes or until golden brown, occasionally turning the potatoes and ensuring the chicken is covered with foil if needed to prevent overbrowning. Place the zucchini around the chicken in the pan.
  • Bake for 15 minutes or until the chicken thighs are pierced in the thickest part and the juices run clear, and the zucchini is tender. Finish by sprinkling with fresh coriander leaves.
