Indulgent Caramilk custard tarts with a shortcut choc ripple biscuit crust.
Ingredients:
  • 20.00 gm vanilla custard powder
  • 257.50 gm milk
  • 180g block Caramilk chocolate, chopped
  • 24 choc ripple biscuits
  • 60g dark chocolate, melted, to drizzle
Instructions:
  • In a saucepan, mix the custard powder with 2 tablespoons of milk until smooth. Pour in the remaining milk and place the saucepan over medium-high heat. Stir the mixture for 8 to 10 minutes until the custard simmers and thickens. Add the chopped Caramilk and stir until smooth. Transfer the mixture to a heatproof bowl, cover the surface with plastic wrap, and let it cool for 30 minutes. Refrigerate for 1 hour until cold.
  • Preheat the oven to 180C (160C fan-forced).
  • Take one biscuit and position it on top of each cavity in two 12-hole round-based shallow patty pans. Bake for 3 to 4 minutes until the biscuits have softened. Then, swiftly utilize a teaspoon to mold the biscuits into a cup shape, following the pan's contours as a reference. Allow to cool for 15 minutes.
  • Ensure the custard is well whisked until smooth. Evenly distribute it among the biscuits. Refrigerate for 1 hour or until firm. Drizzle with melted chocolate and let it sit for 5 minutes before serving.
