Tropical-inspired cocktail with simple syrup, pineapple juice, two rums, and coffee liqueur, inspired by the 1960s Mr. Bali Hai.
Ingredients:
  • 2 tablespoons ground coffee beans
  • 0.5 cup gold rum
  • 5 ounces pineapple juice
  • 1.25 cups freshly squeezed lemon juice
  • 3 cups crushed ice
Instructions:
  • In a large cocktail shaker, mix sugar and water until the sugar dissolves completely.
  • Place a coffee filter in a sieve or pour-over coffee cone over a bowl or mug. Add coffee grounds and gently drizzle a small amount of rum over the grounds. Allow it to soak for about 1 minute. Slowly pour the rest of the rum over the grounds and let it drip through.
  • Combine coffee-washed rum, pineapple juice, lemon juice, and 1 1/2 cups crushed ice with sugar mixture in a cocktail shaker. Shake vigorously until well chilled. Strain equally into 2 collins or old-fashioned glasses and top with remaining crushed ice.
