Indulgent chocolate chip cookies featuring sweet persimmon. Use ripe fruit for optimal flavor.
Ingredients:
  • 1 cup butter, softened
  • 1 cup white sugar
  • 3 Hachiya persimmons, pulp extracted
  • 1 egg
  • 1.5 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2.5 cups chocolate chips
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and elegantly line a baking sheet with parchment paper.
  • In a large bowl, use an electric mixer to beat together butter, sugar, and persimmon pulp until light and fluffy. Mix in eggs and vanilla extract. In a separate bowl, sift together flour, baking soda, and salt, then gradually add to the persimmon mixture until fully combined. Stir in chocolate chips and drop spoonfuls of dough onto a lined baking sheet, spacing them 1 inch apart.
  • Bake until edges turn golden, about 10-13 minutes. Allow to cool on the baking sheet for 1 minute before transferring to a wire rack to cool completely.
