Persimmon spice cookies with raisins and walnuts.
Ingredients:
  • 2 cups white sugar
  • 1 cup shortening
  • 2 eggs
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground nutmeg
  • 2 cups persimmon pulp
  • 2 cups raisin paste
  • 2 cups chopped walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease two baking sheets.
  • In a large mixing bowl, whip the sugar and shortening until light and fluffy. Add the eggs one at a time. Mix in the flour, salt, baking soda, cinnamon, and nutmeg until well combined. Gently fold in the persimmon pulp, raisin paste, and walnuts. Spoon the mixture onto prepared cookie sheets and slightly flatten before baking.
  • Bake in a hot oven until the cookie top bounces back when touched, 12 to 15 minutes. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.
