Overnight breakfast pizza with pesto, scrambled eggs, bacon, and tomatoes. Delicious and simple!
Ingredients:
  • cooking spray
  • 5 eggs, beaten
  • 2 Roma tomatoes, chopped and drained
  • 4 slices cooked bacon, crumbled
  • 1 tablespoon whipped cream cheese
  • 0.5 teaspoon dried parsley
  • salt and ground black pepper to taste
  • 2 teaspoons basil pesto
  • 1 (14 ounce) package pre-baked pizza crust
  • 1 cup shredded Cheddar cheese
Instructions:
  • Preheat the oven to a piping hot 425°F (220°C).
  • Heat a medium skillet over medium heat, spraying it with cooking spray.
  • Combine eggs, tomato, bacon, cream cheese, parsley, salt, and pepper in a bowl and whisk until well mixed. Pour the mixture into a skillet and cook, stirring occasionally, until the eggs are cooked through, about 3 to 5 minutes.
  • Evenly spread pesto on the pizza crust, layer the egg mixture, and sprinkle on the Cheddar cheese.
  • Bake in the oven until the cheese is gooey and the pizza is piping hot, which should take around 10 to 15 minutes. Then, simply slice and enjoy!
