Ingredients:
  • 750g chicken breast fillets, chopped
  • 150.00 gm basil pesto
  • 56.88 gm olive oil
  • 300g small shell pasta
  • 300g antipasto (such as semi-dried tomatoes, marinated mushrooms, chargrilled capsicum), chopped
  • 62.50 ml basil leaves
  • 20.00 ml balsamic vinegar
Instructions:
  • Skewer the chicken and arrange it in a ceramic dish. Mix pesto with 1 1/2 tablespoons oil, then generously spoon it over the chicken, ensuring it's well coated. Refrigerate for 30 minutes, if possible.
  • Boil pasta in a large pot of salted water as per package instructions until tender. Drain and transfer to a big bowl. Mix in antipasto and basil. Combine vinegar with remaining 1 1/2 tablespoons of oil. Drizzle over pasta. Season with salt and pepper. Toss well to mix everything together.
  • Preheat the barbecue plate until it sizzles. Layer a sheet of baking paper on the plate and lay the skewers down to grill for about 4 minutes on each side, or until the chicken is perfectly cooked. Enjoy alongside a refreshing pasta salad. For a portable lunch, easily slide the chicken off the skewer into a fresh salad and mix it all together.
