Savory center cut pork chops topped with flavorful pesto and a kick of red pepper flakes, served alongside your choice of grains and vegetables for a delightful meal.
Ingredients:
  • 6 tablespoons basil pesto, divided
  • 2 tablespoons extra-virgin olive oil
  • 2 (8 ounce) center-cut boneless pork chops (3/4-inch thick)
  • 1 pinch salt and ground black pepper to taste
  • 0.5 teaspoon red pepper flakes
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C), then gently coat a baking dish with cooking spray. Spread half of the pesto evenly onto the bottom of the dish.
  • Preheat a cast iron skillet over medium-high heat for 5 minutes and then add olive oil.
  • Season pork chops generously with salt and pepper. Sear them in hot oil until beautifully browned on both sides, about 4 minutes. Place the pork chops in a baking dish and smother each one with the remaining pesto. Sprinkle with red pepper flakes and cover the dish with foil.
  • Cook in the preheated oven until the center reaches a juicy 145°F (63°C) on an instant-read thermometer, approximately 1 1/2 hours. Rest the pork chops for 10 minutes before serving.
