Festive Christmas pasta salad with pesto-coated orzo resembling pine needles, garnished with mozzarella pearls and cherry tomatoes resembling tree ornaments.
Ingredients:
  • 1 (16 ounce) package uncooked orzo pasta
  • 0.33333334326744 cup pesto, or to taste
  • 2 teaspoons lemon juice
  • 1 cup cherry tomatoes, halved
  • 4 ounces mozzarella cheese balls or pearls
  • 0.25 cup sliced pepperoni, cut into strips
  • 3 large fresh basil leaves, julienned
Instructions:
  • 1. Boil generously salted water in a large pot. Cook orzo, stirring occasionally, until al dente, about 11 minutes. Drain and transfer to a large bowl.
  • Coat the orzo with pesto and lemon juice, then mix in tomatoes, mozzarella cheese balls, and pepperoni strips. Chill in the refrigerator for 8 hours or overnight.
  • Add the fresh basil at the last moment before serving.
