Transform Christmas leftovers into a delicious midweek meal with a Smoked Salmon Pasta Salad using basic ingredients.
Ingredients:
  • 500g trofie or other short pasta
  • 2 bunches asparagus, woody ends trimmed, cut into 3cm lengths
  • 180g creme fraiche
  • 36.40 gm olive oil
  • 62.50 ml dill, finely chopped, plus extra sprigs to serve
  • 1 small garlic clove, finely chopped
  • Grated zest of 1 lemon, plus juice of 1/2 lemon
  • 50g capers
  • 500.00 ml rocket leaves, roughly chopped
  • 200g smoked salmon, sliced into thin strips
Instructions:
  • Boil pasta in a large pot of salted water following the package directions. Add asparagus in the last 1-2 minutes of cooking. Drain, rinse with cold water, and let it cool completely.
  • Whisk together the creme fraiche, olive oil, dill, garlic, lemon juice, half of the zest, and 2 tablespoons of water in a small bowl. Season with salt and pepper, and set aside.
  • Once the pasta has cooled down, mix it with the dressing, capers, arugula, the remaining lemon zest, and smoked salmon. Garnish with extra dill sprigs before serving.
