Pesto Eggs with Shrimp

Elevate deviled eggs with a flavorful pesto twist.
Ingredients:
  • 16 hard-cooked eggs
  • 1/2 cup mayonnaise or salad dressing
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground red pepper (cayenne)
  • 1 cup chopped cooked small shrimp
  • 3 tablespoons basil pesto
  • 32 cooked peeled deveined large shrimp
Instructions:
  • Use a rippled vegetable cutter or sharp knife to halve the eggs lengthwise. Gently scoop out the yolks and transfer them to a small bowl, keeping the egg white halves aside. Combine the yolks with mayonnaise, garlic powder, salt, and red pepper until smooth. Fold in the chopped shrimp.
  • Spoon yolk mixture delicately into egg white halves. Refrigerate covered for up to 24 hours if not serving immediately.
  • Before serving, generously drizzle each with a touch of pesto and crown with a succulent whole shrimp. Serve straight away.
