Mozzarella and Pesto Strata

Indulge in an Italian brunch with a flavorful strata featuring basil pesto, olives, and roasted red peppers, topped with eggs and gooey cheese.
Ingredients:
  • 16 slices (3/4 inch thick) French bread (1/2 pound)
  • 1/2 cup basil pesto
  • 1/2 cup sliced ripe olives
  • 1 cup roasted red bell peppers, (from 12-ounce jar), drained and sliced
  • 2 cups shredded mozzarella cheese (8 ounces)
  • 8 eggs
  • 2 cups milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons freshly shredded Parmesan cheese
Instructions:
  • Prepare the baking dish by spraying it with cooking spray. Spread pesto on one side of each bread slice and place them in the dish with the pesto side facing up, adjusting as needed. Sprinkle olives, bell peppers, and mozzarella cheese on top.
  • Whisk together eggs, milk, salt, and pepper until fully combined. Evenly pour mixture over the cheese in the dish, then sprinkle with Parmesan cheese. Cover and refrigerate for a minimum of 2 hours, but not more than 24 hours.
  • Preheat the oven to 325°F. Bake uncovered for 55 to 60 minutes, or until a knife inserted in the center comes out clean and the top is golden brown. Allow to stand for 5 minutes before cutting.
