Mozzarella-Stuffed Pesto Turkey Meatballs

Juicy turkey meatballs stuffed with melty mozzarella and flavorful pesto, baked and simmered in marinara sauce.
Ingredients:
  • 3 pounds ground turkey
  • 1 cup finely chopped onion
  • 4 garlic cloves, minced
  • 1 cup Italian-style bread crumbs
  • 0.5 cup grated Parmigiano-Reggiano cheese
  • 0.5 cup chopped fresh flat-leaf parsley
  • 0.25 cup prepared pesto
  • 0.25 cup milk
  • 1 tablespoon salt
  • 2 teaspoons fresh ground black pepper
  • 1 pound fresh mozzarella, cut into small cubes
  • 3 tablespoons extra-virgin olive oil
  • 2 (24 ounce) jars marinara sauce
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Combine ground turkey, onion, garlic, egg, bread crumbs, Parmigiano-Reggiano cheese, parsley, pesto, milk, salt, and black pepper in a bowl. Mix thoroughly and shape mixture into 1 3/4-inch meatballs. Stuff each meatball with a cheese cube, ensuring it's sealed within. Arrange meatballs on a nonstick baking sheet and drizzle with olive oil.
  • Cook the meatballs in the preheated oven for about 30 minutes until no longer pink in the center. Warm the marinara sauce in a saucepan over low heat until simmering, then add the cooked meatballs and simmer together for 2 minutes.
