Elevate your weeknight dinner with this easy, gourmet chicken breast dish featuring quick pesto sauce. Ready in under an hour.
Ingredients:
  • 1 cup firmly packed fresh basil leaves
  • 2 tablespoons pine nuts
  • 1 clove garlic
  • 1/4 cup olive or vegetable oil
  • 1/3 cup grated Parmesan cheese
  • 4 boneless skinless chicken breasts
  • 1 cup Homemade Pesto or purchased basil pesto
  • 4 slices (1/2 inch thick) mozzarella cheese
  • 1 cup Progresso™ plain bread crumbs
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Toothpicks
Instructions:
  • For Homemade Pesto, combine basil and pine nuts in a food processor. Pulse a few times, then add garlic and pulse again. While the processor is running, stream in the oil gradually, pausing to scrape down the sides. Add Parmesan cheese and pulse until well combined.
  • Preheat the oven to 375°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • To butterfly each chicken breast, slice it horizontally along the long side, ensuring you don't cut all the way through. Open the chicken breast and flatten it to create a butterfly shape.
  • Cover each chicken breast with a generous layer of delicious Homemade Pesto, place a slice of mozzarella cheese on top, then carefully wrap the chicken around the cheese and secure it with toothpicks.
  • Combine bread crumbs, salt, and pepper in a large bowl. Coat the chicken with the seasoned bread crumbs and place it in a baking dish.
  • Bake for 30-40 minutes, or until chicken is fully cooked. Slice and serve.
