Ingredients:
  • 500g penne rigate
  • 250.00 ml firmly packed fresh basil leaves
  • 40g (1/4 cup) pine nuts
  • 1 garlic clove, roughly chopped
  • 40g (1/2 cup) coarsely grated Parmesan
  • Salt & ground black pepper, to taste
  • 80mls (1/3 cup) olive oil
Instructions:
  • Prepare the pasta by cooking it in a pot of generously salted boiling water until it reaches the desired al dente texture as per the package instructions. (Refer to microwave tip for alternative method.)
  • Simultaneously place basil, pine nuts, garlic, Parmesan, salt, and pepper in a food processor. Blend until smooth. Slowly drizzle in the olive oil while blending until well combined. Toss drained pasta with pesto in the saucepan and serve hot.
