Delicious pesto polenta lasagna with layers of marinara, pesto, mozzarella, and pine nuts - a flavorful and speedy vegetarian dish.
Ingredients:
  • 1 (18 ounce) package polenta, cut into 1/4 inch thick slices
  • 0.5 (24 ounce) jar bottled marinara sauce
  • 0.25 cup pesto
  • 0.25 cup pine nuts
  • 1 cup shredded mozzarella cheese
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and oil an 11x7x2-inch baking dish.
  • Start by lining the bottom of the baking dish with a single layer of polenta. Next, spread a thin layer of pesto on top of the polenta. Then, spoon half of the sauce over the pesto-covered polenta. Finish by adding another layer of polenta and sauce on top.
  • After baking uncovered for 25 minutes, switch on the broiler. Sprinkle polenta with cheese and pine nuts, then broil until cheese is golden brown and nuts are toasted.
