Elevate your polenta with a delicious homemade pesto.
Ingredients:
  • 382.50 gm vegetable liquid stock
  • 3 garlic cloves, crushed
  • 150.00 gm polenta
  • 125.00 ml finely grated parmesan cheese
  • 62.50 ml toasted pine nuts, chopped
  • 125.00 ml shredded fresh basil leaves
  • 40.00 ml chopped fresh oregano leaves
  • 40.00 ml finely chopped fresh chives
  • 126.25 gm light thickened cream
Instructions:
  • In a saucepan over high heat, combine stock, garlic, and 2 cups of cold water. Cover and bring to a boil. Stir in polenta, then reduce heat to low. Cook, stirring constantly, for 5 to 7 minutes until polenta thickens.
  • Combine a luxurious blend of cheese, pine nuts, fresh basil, oregano, chives, and cream. Sprinkle with a pinch of salt and a dash of pepper for a burst of flavor. Serve and enjoy!
