Zoodles tossed in pesto with garbanzo beans for a tasty grain-free dish.
Ingredients:
  • 4 small zucchini, cut into noodle-shape strands
  • 0.5 cup drained and rinsed canned garbanzo beans (chickpeas)
  • 3 tablespoons pesto, or to taste
  • 2 tablespoons shredded white Cheddar cheese, or to taste
Instructions:
  • In a skillet over medium heat, sauté zucchini in olive oil until tender and liquid evaporates, about 5 to 10 minutes.
  • Combine garbanzo beans and flavorful pesto with zucchini. Reduce heat to medium-low and cook until beans are heated through and zucchini is well coated, approximately 5 minutes. Season with salt and pepper to taste.
  • Serve the zucchini mixture in bowls and sprinkle generously with white Cheddar cheese.
