Ingredients:
  • 250.00 ml plain sweet biscuits, broken into crumbs
  • 82.50 gm butter, melted
  • 2 x 250g cream cheese
  • 400g condensed milk
  • 40.00 ml grated lemon rind
  • 6.00 gm gelatine powder, dissolved in 1/4 cup boiling water
  • 131.25 gm lemon juice
Instructions:
  • Combine biscuit crumbs with luscious melted butter, then firmly press into a 20cm pan. Chill in the refrigerator until perfectly set.
  • Beat the cream cheese until velvety, then combine it with the remaining ingredients and gently pour the mixture over the crumb base.
  • Allow to cool in the refrigerator for 2-3 hours. Serve garnished with fresh fruit.
