Homemade pickles: perfect for salads, dressings, burgers, or straight snacking!
Ingredients:
  • 250g qukes
  • 9.60 gm sea salt
  • 160ml (2/3 cup) white wine vinegar
  • 160ml (2/3 cup) water
  • 1 tsp coriander seeds
  • 1/2 tsp black peppercorns
  • 4 whole cloves
  • 2 sprigs fresh tarragon
Instructions:
  • Place the Qukes in a bowl with salt, toss well, and cover with plastic wrap. Let sit for 1 hour to draw out water. Rinse and pat dry with paper towel.
  • In a saucepan, mix the vinegar and water together and simmer over medium heat for 2 minutes.
  • Layer the Qukes, coriander seeds, peppercorns, cloves, bay leaves, and tarragon in a sterilized 750ml jar. Cover with the hot vinegar mixture. Seal the jar and let it sit for a week before enjoying. Serve the pickles with pate, terrine, or cheese for a delightful accompaniment.
