Vegan nachos with creamy queso, sofritas, beans, salsa, and guacamole. A crowd-pleaser for all! Easy to customize.
Ingredients:
  • 1 (10 to 11-ounce) bag sturdy tortilla chips
  • 1 recipe copycat sofritas, warmed (about 3 cups) [ADD LINK]
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 recipe vegan queso , warmed (about 2 cups)
  • 2/3 cup salsa, store-bought or homemade
  • 2/3 cup guacamole, store-bought or homemade
  • 1/3 cup pickled jalapeños
  • 1/4 cup chopped fresh cilantro
  • 1 to 2 limes, cut into wedges
Instructions:
  • Preheat the oven to 350°F to create the perfect cooking environment for your dish.
  • Arrange the chips in a single layer on a pan with sides, slightly overlapping. Bake in the preheated oven for 5 minutes to achieve a slight crispiness.
  • Drizzle 1 1/2 cups of warm queso over the chips, then sprinkle with beans and sofritas. Bake for about 5 minutes until warmed through.
