Air fryer nachos jacket sweet potatoes recipe

Satisfying vegan swap for cheesy, creamy snack or meal.
Ingredients:
  • 2 (about 200g each) small sweet potatoes
  • 400g can black beans, rinsed, drained
  • 125g corn kernels, drained
  • 125ml (1/2 cup) taco sauce or tomato salsa, plus extra, to serve
  • 35g (1/3 cup) coarsely grated cheddar
  • Corn chips, to serve
  • 1/2 avocado, mashed
  • 37.60 gm Light Sour Cream
  • 2 tsp chopped fresh coriander leaves
Instructions:
  • Prepare the sweet potatoes by scrubbing them clean and piercing them with a small sharp knife. Then, air fry them at 180°C for 30 minutes until perfectly cooked.
  • Combine the black beans, corn, and your favorite sauce or salsa in a bowl.
  • Remove the sweet potatoes from the air fryer and carefully place them on individual pieces of baking paper for easy handling. Make a lengthwise cut on each sweet potato, ensuring not to slice all the way through. Gently open the sweet potatoes to create a bowl shape. Fill each sweet potato with the bean mixture and press it down lightly using the back of a spoon. Finally, sprinkle each sweet potato with 25g (1/4 cup) of cheddar cheese.
  • Gently place sweet potatoes in the air fryer. Cook at 180°C for 3 minutes until heated through with melted cheese. Add corn chips and remaining cheddar. Cook for another 2 minutes until cheese melts. Transfer sweet potatoes to serving plates. Top with avocado, sour cream, coriander, extra sauce or salsa. Season and enjoy.
