Delicious pierogi pizza features potato, cheese, green onion, and bacon toppings on a crispy homemade crust.
Ingredients:
  • 2.25 teaspoons active dry yeast
  • 2 teaspoons white sugar
  • 1 cup warm water
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 6 potatoes, thinly sliced
  • 2 tablespoons olive oil
  • 8 ounces sour cream
  • 2 tablespoons garlic powder
  • 1 (8 ounce) package marbled Colby-Monterey Jack cheese, shredded
  • 1 bunch green onions, chopped
  • 0.25 cup bacon bits, or to taste
Instructions:
  • Prepare your dough by combining yeast and sugar in a bowl of warm water. Allow the mixture to sit until the yeast softens and starts to bubble, which should take approximately 5 minutes.
  • In a large bowl, mix flour and salt together. Pour in the yeast mixture and oil. Knead until a sticky dough forms, about 5 minutes. Transfer the dough to a large, lightly oiled bowl, and turn to coat. Cover with a towel and let it rise in a warm place until doubled in volume, approximately 1 hour.
  • While you wait, get the toppings ready: Add potatoes to a large pot and cover with water. Boil until potatoes are tender, approximately 10 minutes. Drain the potatoes.
  • In a large skillet over medium-high heat, heat oil until shimmering. Add potatoes and cook until they turn a light golden color, around 5 minutes.
  • Preheat the oven to 400°F (200°C) for a perfectly heated cooking environment.
  • Combine sour cream and garlic powder in a small bowl, whisking together until smooth.
  • Smooth and stretch the dough into a 12-inch circle on a pizza stone. Evenly spread the sour cream mixture over the dough. Top it with potatoes to cover the dough completely. Sprinkle with cheese, green onions, and bacon bits.
  • Bake until the crust turns golden brown, approximately 15-20 minutes in the preheated oven.
