Savory cabbage with cheesy potato pierogies, served with a side salad for a satisfying meal.
Ingredients:
  • 2 tablespoons vegetable oil, divided
  • 1 (16 ounce) package frozen potato and cheese filled pierogies
  • 0.25 pound bacon, diced
  • 0.5 small head cabbage, chopped
  • 1 large onion, thinly sliced
  • 2 medium tomatoes, chopped
  • 2 teaspoons white wine vinegar
  • 0.5 teaspoon white sugar
  • 0.5 teaspoon salt
Instructions:
  • In a large skillet over medium heat, warm up 1 tablespoon of oil. Cook the frozen pierogies until they are golden brown on both sides, turning occasionally, for about 8 minutes per side. Keep them warm until you're ready to serve.
  • Brown the bacon in a large, deep skillet over medium-high heat for 7 to 10 minutes. Transfer the crispy bacon to a paper towel-lined plate, keeping the flavorful drippings in the pan.
  • In the bacon drippings, toss in cabbage and onion, stir well, cover, and let it simmer on medium heat for 10 minutes. Mix in tomatoes, the extra tablespoon of oil, vinegar, sugar, and salt. Lastly, add the bacon and cook uncovered for an additional 5 minutes.
  • Toss pierogies with the flavorful cabbage mixture and enjoy!
