Delicious Pig Pickin' Cake: Easy three-layer cake with whipped topping and pineapple.
Ingredients:
  • 1 (15.25 ounce) package yellow cake mix
  • 1 (11 ounce) can mandarin oranges, juice reserved
  • 4 large eggs
  • 0.25 cup vegetable oil
  • 1 (16 ounce) package frozen whipped topping, thawed
  • 1 (15 ounce) can crushed pineapple, drained
  • 1 (3.5 ounce) package instant vanilla pudding mix
Instructions:
  • Collect all your ingredients and preheat the oven to 350 degrees F (175 degrees C).
  • Combine the cake mix, mandarin oranges with their juice, eggs, and oil until well mixed. Divide the batter evenly among three greased and floured 8-inch round pans for thinner layers.
  • Bake in the oven until a toothpick comes out clean, about 25-30 minutes. Let layers cool on wire racks.
  • Prepare the frosting by combining whipped topping, crushed pineapple, and instant pudding mix.
  • Frost the cooled cake layers generously, then stack them up, covering the top and sides. Chill in the refrigerator until serving.
