Pig Skin Cornbread

Elevate your cornbread with corn, bell peppers, garlic, and crispy pig skins for a unique and flavorful twist that will impress your guests.
Ingredients:
  • 1 tablespoon shortening
  • 1 cup buttermilk
  • 1/2 cup butter or margarine, melted and cooled
  • 3 eggs
  • 2 cups cornbread mix
  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 cup canned whole kernel corn, drained
  • 1 tablespoon sugar
  • 1 tablespoon chopped red bell pepper
  • 1 tablespoon chopped green bell pepper
  • 1 1/2 teaspoons chopped garlic
  • 2 cups coarsely broken pig skins
Instructions:
  • Preheat oven to 425°F. Place shortening in a 10-inch ovenproof skillet or 9x9x2-inch square baking pan and heat in the oven for 3 minutes.
  • In a large bowl, combine buttermilk, butter, and eggs. Gently mix in all ingredients except the skins until just moistened. Fold in the skins and pour the batter into a skillet.
  • Bake until beautifully golden brown, then serve piping hot.
