Elevate store-bought pikelets with a luscious homemade caramel drizzle.
Ingredients:
  • 50g butter
  • 45g (1/4 cup, lightly packed) brown sugar
  • 80ml (1/3 cup) thickened cream
  • 8 bought pikelets
  • 2 bananas, peeled, sliced
  • Vanilla ice-cream, to serve
Instructions:
  • In a medium frying pan over medium heat, melt the butter until bubbling. Stir in the sugar and cook for 2-3 minutes until dissolved.
  • Stir in the cream and cook until the sauce boils. Simmer until the sauce thickens, about 2 minutes.
  • Arrange the pikelets on serving plates. Add sliced bananas on top. Drizzle with caramel sauce and serve with a scoop of ice cream.
