Pineapple, lime and coconut chews

Indulge in delightful pineapple treats, ideal for spring baking.
Ingredients:
  • 3 egg whites
  • 10.00 gm cornflour
  • 1 tsp finely grated lime rind
  • 125.00 ml finely chopped dried pineapple
  • 32.50 gm shredded coconut, lightly toasted
  • Icing sugar mixture, to serve
Instructions:
  • Preheat your oven to 160°C/140°C fan-forced and prepare 2 large baking trays by lining them with baking paper.
  • With an electric mixer, whip egg whites until soft peaks form. Slowly incorporate sugar, 1 tablespoon at a time, until fully dissolved. Beat for an additional 2 minutes until the mixture is glossy. Transfer to a large bowl and gently fold in half of the cornflour, lime rind, pineapple, and coconut. Repeat with the remaining cornflour, lime rind, pineapple, and coconut.
  • Using heaped tablespoons, spoon meringue mixture onto prepared trays, leaving 4cm space between each. Bake for 25 to 30 minutes until crisp. Cool on trays for 5 minutes, then transfer to a wire rack to cool completely. Dust with icing sugar and serve.
