Elevate your fried rice with roasted cauliflower, ground chicken, and egg whites for a delicious twist.
Ingredients:
  • 1 (12 ounce) package frozen riced cauliflower
  • 4 teaspoons curry powder, divided
  • 2 teaspoons garlic powder, divided
  • 2 teaspoons onion powder, divided
  • 1 pound ground chicken
  • 5 egg whites
  • 6 green onions, chopped
  • 1 (20 ounce) can pineapple chunks
  • 4 teaspoons low-sodium soy sauce, or to taste
Instructions:
  • Turn the oven up to a toasty 425 degrees F (220 degrees C).
  • Coat cauliflower in a fragrant blend of olive oil, 3 teaspoons curry powder, 1 teaspoon garlic powder, 1 teaspoon onion powder, salt, and pepper in a spacious bowl. Transfer the seasoned mixture to a baking pan.
  • Bake until lightly golden for about 25 minutes in the preheated oven.
  • 1. Begin by heating a pan over medium heat. Add chicken, salt, and pepper then mix in the remaining curry powder, garlic powder, and onion powder. Cook until the chicken is nicely browned, which should take approximately 5 to 7 minutes. Finally, transfer the cooked chicken to a large bowl while keeping the pan on the heat.
  • Whisk pepper into egg whites until frothy. Cook in a pan until softly set, around 3 minutes. Combine with chicken, green onions, and roasted cauliflower rice in a bowl. Serve in individual bowls and top with pineapple chunks, a splash of pineapple juice, and soy sauce.
