Deliciously nostalgic pineapple coconut slice.
Ingredients:
  • 440g can pineapple pieces in juice
  • 150g butter, softened
  • 141.90 gm caster sugar
  • 4.40 gm vanilla essence
  • 187.50 gm self-raising flour
  • 56.10 gm desiccated coconut
  • 16.25 gm shredded coconut
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Grease a 3cm-deep, 16cm x 26cm slice pan, then line it with baking paper, leaving a 2cm overhang at the long ends. Drain the pineapple, saving 1/3 cup of the juice.
  • Beat butter, sugar, and vanilla with an electric mixer until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in flour, dessicated coconut, and pineapple juice until just combined. Spread the mixture into the prepared pan, top with pineapple, sprinkle with shredded coconut, and lightly press it down. Bake for 40 minutes or until a skewer inserted in the center comes out clean and the slice is firm to the touch. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Cut into 12 squares and serve.
