Pineapple ginger punch

Family-favorite summer punch.
Ingredients:
  • 1 litre chilled ginger beer
  • 787.50 gm chilled tropical fruit juice
  • 6 passionfruit (see note), halved
  • 1/2 small pineapple, peeled, finely chopped
  • 250.00 ml fresh mint leaves, torn
  • 500.00 ml ice cubes
Instructions:
  • Combine the ginger beer, juice, passionfruit pulp, pineapple, and mint in a punch bowl. Gently stir to mix. Add ice and serve.
