Citrusy orange juice and tropical pineapple add a delicious twist to a classic breakfast dish.
Ingredients:
  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 egg
  • 2 tablespoons orange juice
  • 0.75 cup buttermilk
  • 2 tablespoons canola oil
  • 1 (8 ounce) can slices canned pineapple, chopped
Instructions:
  • Heat a lightly oiled griddle over medium heat to get it ready.
  • Combine flour, sugar, baking powder, baking soda, and salt in a large bowl, sifting as you go.
  • Combine egg, orange juice, buttermilk, and canola oil in a small bowl, then mix into the flour mixture. Fold in pineapple.
  • Ladle the batter in 1/4 cup portions onto the griddle. Cook until bubbles form, then flip and cook until golden brown.
