Whip up a refreshing pineapple dessert for a deliciously cool treat.
Ingredients:
  • 1/2 fresh pineapple
  • 185ml (3/4 cup) milk
  • 5.30 gm fresh lime juice
  • 1 tsp finely grated lime rind
  • Frozen berries, to decorate
  • Chia seeds, to decorate
  • Baby mint leaves, to decorate
Instructions:
  • Carefully carve out the pineapple flesh without cutting through, leaving a 1cm-thick shell. Chop the flesh into small pieces, discarding the core (approximately 400g). Transfer the pieces to a freezerproof container and freeze for 4-6 hours until solid. Keep the pineapple shell chilled in the fridge.
  • Blend frozen pineapple, milk, lime juice, and rind until smooth and creamy like soft serve ice cream. Scoop the mixture into the pineapple shell and garnish with berries, chia seeds, and mint leaves.
