Whip up a pineapple mint punch for a quick and refreshing drink. Add gin or vodka for a boozy twist! Perfect for entertaining.
Ingredients:
  • 2kg pineapple
  • 565g can lychees in syrup
  • 62.50 ml fresh mint leaves
  • 1 litre pineapple juice, chilled
  • 750ml ginger beer, chilled
  • ice cubes, to serve
Instructions:
  • In a food processor, combine pineapple, undrained lychees, and mint. Blend until smooth, then transfer to a large jug. Stir in pineapple juice, ginger beer, and ice. Serve and enjoy!
