Transform sponge cake and jelly into a delightful treat for kids with this fun and easy lamington recipe.
Ingredients:
  • 85g packet raspberry jelly crystals
  • 2 x 22cm-24cm round unfilled sponge cakes
  • 90g desiccated coconut
Instructions:
  • Combine crystals with boiling water in a large heatproof jug and stir with a metal spoon until dissolved. Mix in cold water, transfer to a shallow dish, and refrigerate for 1 hour until the jelly begins to set.
  • Cut each fluffy sponge cake into 8 delightful wedges, and carefully trim off the crispy brown crust.
  • Place coconut in a shallow dish. Dip sponge wedges into jelly mixture, then coat with coconut by rolling.
