Beat the heat with a frozen lemonade pie - a delightful blend of lemonade concentrate, vanilla ice cream, and fluffy whipped topping for a refreshing treat.
Ingredients:
  • 1 1/2 cups finely crushed graham crackers (20 squares)
  • 1/3 cup butter or margarine, melted
  • 3 tablespoons sugar
  • 1 quart (4 cups) vanilla ice cream, softened
  • 1/2 can (12-oz size) frozen pink lemonade concentrate, thawed
  • 1 container (4 oz) frozen whipped topping, thawed
  • Red food color, if desired
  • Lemon or lime peel, if desired
Instructions:
  • Preheat the oven to 350°F. Combine all crust ingredients in a medium bowl until fully blended. Press the mixture onto the bottom and sides of a 9-inch glass pie plate. Bake for 8 to 10 minutes until it turns golden brown; then allow it to cool.
  • Combine the ice cream, lemonade concentrate, whipped topping, and a few drops of food color in a large bowl. Spoon the ice cream mixture into the cooled crust and spread it evenly.
  • Chill until firm for about 4 hours, then let it sit at room temperature for a few minutes before slicing. Top with a sprinkle of fresh lemon zest for extra flavor.
