Pink Lemonade Cookies

Easily whip up delicious sugar cookie gems for picnics or parties using Betty Crocker mix. Customize to your liking for a perfect treat.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1 egg
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1/4 cup frozen (thawed) pink lemonade concentrate
  • 1/4 cup butter or margarine, softened
  • 2 cups powdered sugar
  • 3 to 4 tablespoons frozen (thawed) pink lemonade concentrate
Instructions:
  • Preheat the oven to 375°F and line a cookie sheet with parchment paper.
  • Use an electric mixer to blend all cookie ingredients in a large bowl until well combined. Drop dough by rounded teaspoonfuls onto a cookie sheet.
  • Bake until edges start to brown, 9 to 11 minutes. Let cool for 1 minute, then transfer to a cooling rack. Allow to cool completely, approximately 20 minutes.
  • Combine 1/4 cup butter, powdered sugar, and 3 tablespoons lemonade concentrate in a medium bowl. Use an electric mixer on low speed until smooth. Add more concentrate, 1 tablespoon at a time, for desired consistency. Frost cookies.
