Buttery pink lemonade drop cookies with sweet icing for a burst of summer flavor.
Ingredients:
  • 0.5 cup butter, softened
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.33333334326744 cup frozen pink lemonade concentrate, thawed
  • 1.75 cups all-purpose flour
  • 2 cups confectioners' sugar
  • 2 tablespoons frozen pink lemonade concentrate, thawed
  • 2 tablespoons butter, softened
  • 2 drops red food coloring
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • In a bowl, use an electric mixer to whip 1/2 cup butter until smooth. Blend in white sugar, baking powder, and baking soda. Mix in 1/3 cup pink lemonade concentrate and an egg. Combine with flour until dough forms.
  • Scoop dough onto the baking sheet using a rounded spoon, leaving 2 inches of space between each one.
  • Bake in the oven until edges are golden, about 10-12 minutes. Then cool on a wire rack for about 10 minutes before serving.
  • In a large bowl, mix confectioners' sugar, 2 tablespoons pink lemonade concentrate, and 2 tablespoons butter using an electric mixer until smooth. Incorporate red food coloring.
  • Frost the cooled cookies with icing.
