Indulge your loved ones with this decadent holiday fudge.
Ingredients:
  • 395g can condensed milk
  • 220g caster sugar
  • 125g butter, chopped
  • 50.00 gm liquid glucose or corn syrup
  • 100g white chocolate, finely chopped
  • 75g pistachio
  • 75g dried cranberry
  • pink cochineal or red food colouring
Instructions:
  • Prepare a 4 1/2 x 7 1/2 x 25cm bar pan by lining it with non-stick baking paper. In a large heatproof, microwave-safe bowl, mix condensed milk, caster sugar, butter, and glucose/corn syrup. Microwave uncovered on medium-high/70% power, stirring every 2 minutes, for 6-8 minutes until the mixture starts to boil.
  • Mix the white chocolate, pistachio kernels, and craisins until the chocolate is completely melted.
  • Stir in a touch of food coloring until fully blended. Transfer mixture to pan and level the top. Chill in the fridge for 2 hours. Cut into individual pieces before serving.
