Effortless holiday candy with just 6 ingredients, perfect for busy times.
Ingredients:
  • 2 cups sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 1 cup butter
  • 2 cups salted shelled pistachios
  • 1 teaspoon baking soda
Instructions:
  • Preheat oven to 200°F and prepare 2 cookie sheets with a light greasing. In a large 5- to 6-quart saucepan, combine sugar, corn syrup, and water. Bring to a boil over medium heat, stirring regularly. Mix in the butter until fully incorporated.
  • Stir occasionally over medium heat until candy thermometer reaches 240°F, about 10 minutes. While cooking, warm cookie sheets in the oven to help the candy spread smoothly before it hardens.
  • Add pistachios to the sugar mixture and keep stirring regularly until the candy thermometer shows 300°F. Take the mixture off the heat and gently mix in the baking soda until it becomes light and foamy.
  • Take out the cookie sheets from the oven and carefully pour the candy onto them. Use a buttered spatula to evenly spread the candy until it reaches a thickness of about 1/4-inch. Allow the candy to cool completely for approximately 1 hour, then break it into pieces and store in an airtight container.
