Pistachio brownies

Decadent dark chocolate brownie with a delightful crunch of green pistachios.
Ingredients:
  • Melted butter, to grease
  • 75g unsalted butter
  • 100g good-quality dark chocolate, coarsely chopped
  • 100g (1/2 cup, firmly packed) brown sugar
  • 1 egg yolk
  • 50g (1/3 cup) plain flour
  • 40g (1/4 cup) pistachio kernels, coarsely chopped
Instructions:
  • Preheat your oven to 160°C. Grease a 10.5 x 20.5cm loaf pan with melted butter, then line the base and two long sides with non-stick baking paper, leaving the edges to hang over the sides.
  • In a heatproof bowl set over simmering water, gently melt the butter and chocolate together using a metal spoon until smooth. Let the mixture cool for 5 minutes before using.
  • Combine sugar and vanilla with the chocolate mixture, whisk until smooth. Mix in the egg and egg yolk until fully combined. Add flour and whisk until smooth. Fold in the pistachios. Pour the batter into the prepared pan and level the top. Bake for 30-35 minutes until a skewer comes out with crumbs. Let it cool in the pan before transferring to a wire rack. Trim the edges with a serrated knife and cut into 16 squares.
